Marees Carib Chickpea Vegetables Soup

This hearty vegetable (hard food) based soup is full of flavour, which has the authentic taste of the Caribbean. Very easy to prepare and is used as a main meal, You can have it with sourdough bread or just on its own.


3 tbsp avocado oil
2 medium red onion (peel and dice)
2 clove garlic (peel and dice)
5-6 baby green bananas
2 vegan veg stock
1 scotch bonnet halved deseeded and chopped
1 tbsp ground cum
1 tbsp ground paprika
1 tbsp ground coriander
5 tin chickpea drained
Parsley for garnish


Step 1:

Fry the onion with oil in a medium soup pot until it’s softened add baby green banana, add garlic powder, coriander, paprika, Cumin and scotch bonnet cook for 5min until you can smell the spices cooked..

Step 2:

Add the chickpea along with the veg stock with 3 cups of water. Let the soup cook for 15 min, remove the soup and serve as it is or you can blend it smooth to your desire.. sprinkle with fresh parsley n a drizzle of avocado oil.

This soup goes great with lightly toasted slice sourdough bread..
