Marees Chickpea Patty Carib Stew

This delectable chickpea patty stew is a fine mix of herbs and spices from the Caribbean, which is highly flavorsome. Goes perfect with fried dumplings or boiled coconut quinoa.


4 marees chickpea patty
3 the rapeseed oil
3 carrots washed/slice
5 tbsp tin chopped tomatoes
1 head broccoli roughly chopped
2 red onion, diced
2 mix sweet peppers
2 tbsp fresh thyme
1 tbsp Browing
1 tbsp knob vegan butter
1 tsp sea salt
1 tsp corse black pepper
1 tbsp agave
1 scotch bonnet deseed


Step 1:

Heat a large stew pot on low add oil diced onion,mix sweet peppers, slice carrots, Browing, scotch bonnet,thyme and agave fry them off for 10min

Step 2:

Add the chopped tomatoes to the pot with vegetables cub stock simmer for 10min on low. Add then the chickpea patty season with salt and corse Black pepper to your teaste simmer for a further 15min.
This stew is perfect with coconut quinoa and fresh green salad..enjoy
